Chipotle Chicken Tray Bake - including chicken, tenderstem broccoli, halloumi in a large roasting tray.

High protein, smoky chicken tray bake. Perfect for meal prep. Serve with wholegrain rice or potatoes if desired.

Ingredients

9 Chicken thighs

1 White onion, chop

160g Tinned butter beans, drained

160g Tinned chickpeas, drained

30g Chipotle paste

30g Extra virgin olive oil

85g Tomato puree

15g Garlic granules

15g Dried oregano

250g Halloumi, cut into slices

100g Tenderstem broccoli, chop in half

Method

Step 1

Cut halloumi and onion into slices.

Step 2

In a bowl mix together chipotle paste, olive oil, tomato puree, garlic granules and oregano.

Step 3

Place chicken, chickpeas, butterbeans, chipotle mixture, broccoli and onion in a large roasting tray and mix together until well covered.

Step 4

Add halloumi slices on top.

Step 5

Bake at 180 degrees for 40 minutes or until chicken is cooked through.
