Rooibos Hibiscus Cooler with Ginger & Lime

A bright, caffeine-free cooler that blends rooibos, hibiscus, ginger and lime for a revitalising everyday drink. Simple to make with common UK supermarket ingredients and perfect chilled for evenings or warm afternoons.

Ingredients

1000ml Cold water

6g Dried rooibos (loose-leaf or crushed tea)

8g Dried hibiscus petals (also sold as hibiscus tea)

30g Fresh root ginger, peeled and thinly sliced

60g Agave syrup (use honey instead if preferred (not vegan))

2 Limes, juiced (about 60ml), plus 2 thin slices for garnish

10g Fresh mint leaves, roughly torn, plus sprigs for garnish (optional)

300g Ice cubes (optional, for serving)

Method

Step 1

Bring 500ml of the water to a gentle simmer in a saucepan.

Step 2

Add the rooibos, hibiscus and sliced ginger to the simmering water, reduce heat and simmer gently for 3 minutes to release the flavour.

Step 3

Remove the pan from the heat and add the remaining 500ml cold water to stop extraction; cover and leave to steep for 10 minutes.

Step 4

Strain the tea through a fine sieve into a heatproof jug, pressing gently on the solids to extract liquids, then discard the solids.

Step 5

While the tea is still warm, stir in the agave syrup until fully dissolved, then add the lime juice and mint leaves and stir to combine.

Step 6

Allow the mixture to cool to room temperature, then chill in the fridge for at least 1 hour.

Step 7

To serve, fill glasses with ice, pour the cooled rooibos hibiscus cooler over the ice, garnish with lime slices and mint sprigs and serve immediately. For a fizzy version, top each glass with 50ml sparkling water.

Recipe Notes

Make a concentrate by using half the water and diluting when serving. Keeps in a sealed jug in the fridge for up to 3 days. Adjust sweetness to taste or swap for honey if not vegan.
