Quick Chicken Caesar Salad

The classic Caesar salad, made with simple ingredients and a quick homemade dressing. If you feel extra lazy, use a shop-bought sauce ready to go.

Ingredients

2 small chicken breasts

1tbsp olive oil

1 tsp dried mixed herbs

2 slices bread, cut into cubes (for croutons)

1 romaine lettuce, roughly chopped

25g Parmesan or hard cheese, shaved

Sea salt and black pepper (to taste)

Method

Step 1

Heat a frying pan with ½ tbsp olive oil. Season the chicken with herbs, salt and pepper, then fry for 6–7 minutes each side until cooked through. Rest, then slice.

Step 2

In the same pan, add the remaining ½ tbsp olive oil and the bread cubes. Fry for 4–5 minutes, stirring often, until crisp and golden.

Step 3

In a small bowl, whisk together yoghurt, mayonnaise, mustard, garlic, and lemon juice to make the dressing. Season to taste.

Step 4

Toss the chopped lettuce with the dressing, then top with sliced chicken, croutons, and Parmesan shavings. Serve straight away.

Recipe Notes

Save some cash by using leftover roast chicken and swapping Parmesan for a cheaper hard cheese.
