A bright, refreshing South American-inspired spritz that blends tropical passion fruit, zesty lime and fresh mint, topped with sparkling water. Quick and simple to make for non-alcoholic entertaining.

Ingredients

200g Passion fruit pulp (Approx pulp from 6–8 fruits; reserve 2 halved for garnish if wished (included in 200g))

60g Caster sugar (For simple syrup)

60ml Water (for syrup)

60ml Fresh lime juice, juiced (About 3 limes)

12g Fresh mint leaves, leaves, lightly bruised

800ml Sparkling water (Chilled; about 200ml per serving)

As needed Ice cubes (To serve)

Method

Step 1

Make a quick syrup: place the caster sugar and 60ml water in a small saucepan and warm gently, stirring until the sugar dissolves. Remove from the heat and leave to cool for a few minutes.

Step 2

In a jug, combine the passion fruit pulp, lime juice and the cooled syrup. Stir to mix.

Step 3

Add the bruised mint leaves to the jug and gently press once or twice with a muddler or wooden spoon to release the oils; avoid over-muddling to keep bitterness low.

Step 4

Fill 4 tall glasses with ice. Pour the passion fruit mix evenly between the glasses (about 150ml per glass).

Step 5

Top each glass with 200ml chilled sparkling water and give a gentle stir to combine. Taste and add a little extra syrup or lime if needed.

Step 6

Garnish each glass with a sprig of mint and a halved passion fruit or a lime wedge. Serve immediately.

Recipe Notes

Make the syrup in advance and chill to speed assembly. For a lighter version, reduce sugar to 40g and increase lime to keep balance.
