A bright, Korean-inspired non-alcoholic spritz combining green tea, fresh ginger and lemon with a touch of honey and sparkling water. Quick to make and refreshing for the whole family.

Ingredients

800ml water, boiling (for brewing tea and ginger)

4 green tea bags

40g fresh ginger, peeled and thinly sliced

2 tbsp honey

1 lemon, juiced

600ml sparkling water, chilled

as needed ice cubes

as needed mint leaves

Method

Step 1

Place the sliced ginger and 800ml water in a medium saucepan and bring to a gentle simmer. Simmer for 4-5 minutes to extract the flavour from the ginger.

Step 2

Remove the pan from the heat, add the green tea bags and allow to steep for 3-4 minutes for a mild brew. Avoid over-steeping to prevent bitterness.

Step 3

Strain the mixture through a fine sieve into a heatproof jug, pressing gently on the ginger and tea bags to release flavour. Discard solids.

Step 4

While the tea is still warm, stir in the honey until dissolved, then add the lemon juice. Taste and adjust honey or lemon as needed.

Step 5

Allow the ginger green tea to cool to room temperature, then chill in the fridge for 10 minutes if time allows. For immediate service, proceed to the next step.

Step 6

To serve, fill four tall glasses with ice if using. Divide the chilled ginger green tea between the glasses (about 150ml per glass), then top each with sparkling water (about 150ml) and gently stir once.

Step 7

Garnish with lemon slices and a sprig of mint. Serve immediately.

Recipe Notes
