Looking for a quick, energising snack that actually tastes amazing? These Chocolate Peanut Butter Date Bites are your new go-to. Naturally sweet, rich in fibre and healthy fats, and ready in minutes. No baking required.

Ingredients

50g 85% Dark chocolate (Use other percentage choc if preferred. E.g. 70% if you prefer less intense taste)

30g Chia seeds

12 Medjool dates

5tbs Crunchy peanut butter (Use smooth is preferred, or other nut butter)

2tbs Mixed seeds

Pinch of Sea salt

Method

Step 1

De-pit dates and cut in half. Place a layer of baking parchment on a plate or tray. Place dates skin side up. Place another piece of baking parchment on top of dates and use a rolling pin to flatten. Remove top baking parchment.

Step 2

Spread peanut butter on top of dates and spread evenly.

Step 3

Place chocolate and chia seeds in a microwave safe or heat-proof bowl. Place bowl over a simmering pot of water or in the microwave until fully melted.

Step 4

Pour melted chocolate mixture on top of dates and spread evenly.

Step 5

Sprinkle the mixed seeds and pinch of sea salt on top.

Step 6

Place in the fridge to set.
