A bright, alcohol-free Caribbean-inspired cooler that combines juicy pineapple, zesty lime, warming ginger and hydrating coconut water for a refreshing everyday drink. Simple, affordable and ready in minutes.

Ingredients

400g Fresh pineapple, chopped (Use ripe pineapple for best sweetness)

600ml Coconut water, chilled (Plain coconut water from supermarket)

40ml Fresh lime juice, juiced (About 2 limes; adjust to taste)

10g Fresh ginger, peeled and grated (Adjust for spice level)

300ml Sparkling water, chilled (Adds fizz; use still water if preferred)

10g Fresh mint leaves, leaves (For garnish and gentle freshness, optional)

200g Ice cubes, optional (Optional; add to serve chilled)

Method

Step 1

Place the chopped pineapple, grated ginger and lime juice in a blender with 150ml of the coconut water and blend until smooth.

Step 2

Pour the blended mix through a fine sieve into a jug, using a spoon to press out the juice and some pulp. Discard coarse fibres left in the sieve or reserve for smoothies.

Step 3

Stir the strained pineapple liquid into the jug with the remaining coconut water. Taste and adjust lime or ginger if needed.

Step 4

Just before serving, add the chilled sparkling water to the jug to keep the fizz. Add ice cubes to glasses if using.

Step 5

Divide the cooler between four glasses, garnish with fresh mint leaves and a lime wedge, then serve immediately.

Recipe Notes
