A light, Brazilian inspired mocktail that combines muddled lime and sugar with sparkling water for a crisp, refreshing drink.

Ingredients

2 limes, quartered

2 tbsp (30g) caster sugar (adjust to taste or substitute 1 tbsp simple syrup for easier dissolving)

300ml sparkling water, chilled

300g crushed ice, crushed

6 leaves mint leaves, lightly bruised

2 lime wheels, for garnish

Method

Step 1

Place the quartered limes and caster sugar into a sturdy glass or mixing jug.

Step 2

Using a muddler or the back of a wooden spoon, press and twist the limes and sugar together for about 20 to 30 seconds until the sugar dissolves slightly and the limes release their juices.

Step 3

Divide the crushed ice between two short tumblers. Scoop the muddled lime and any syrup into the glasses, distributing evenly.

Step 4

Add a few bruised mint leaves to each glass if using.

Step 5

Top each glass with 150ml chilled sparkling water and stir gently to combine so the sugar lifts into the drink.

Step 6

Garnish with a lime wheel and a small mint sprig. Serve immediately.
