Sweet and satiating overnight oats, full of healthy fats, fibre, and antioxidants.

Ingredients

50g Rolled oats

2 Medjool dates, chop & mash (use boiling water to help break up the dates when mashing)

2 squares Dark chocolate (85%), melt in a bowl

50ml Milk of choice (I used oat)

50g Kefir yoghurt

50g Greek yoghurt (can choose just one type of yoghurt if preferred)

2tsp Mixed seeds

1tsp Chia seeds

Method

Step 1

De-pit and chop up the dates. Place in a bowl with a splash of boiling water and leave to soften.

Step 2

Mix oats, seeds, yoghurt and milk in a bowl/container.

Step 3

(Optional): Add in some protein powder to the oat mixture, and add a little extra liquid to the mixture if needs be.

Step 4

Place the dark chocolate in a bowl and melt until it’s a runny consistency.

Step 5

Return to the dates and mash with a fork until it forms a thick paste like consistency and spread on top of the oat mixture.

Step 6

(Optional): spread a layer of nut butter on top of the date mixture for an extra hit of protein.

Step 7

Drizzle the melted chocolate on top, followed by a pinch of sea salt.

Step 8

Leave the oats to set in the fridge until consuming.
