Pomegranate Rosewater Spritz

A quick, alcohol-free spritz inspired by Middle Eastern flavours. Bright pomegranate, a whisper of rosewater and fresh mint make a fragrant, refreshing drink.

Ingredients

400ml pomegranate juice (use 100% juice from supermarket)

500ml sparkling water, chilled (soda water or plain sparkling)

60g caster sugar, for simple syrup

60ml water, for simple syrup

1 tsp rosewater

1 tbsp fresh lemon juice, freshly squeezed

10g fresh mint leaves, lightly bruised (plus extra sprigs to garnish)

80g pomegranate seeds (for garnish and texture)

as required ice cubes (optional)

Method

Step 1

Make the simple syrup: combine 60g caster sugar and 60ml water in a small saucepan. Warm gently, stirring until the sugar dissolves. Bring just to a simmer for 1 minute, then remove from the heat and leave to cool.

Step 2

In a measuring jug or mixing jug combine 400ml pomegranate juice, the cooled simple syrup, 15ml lemon juice and 1 tsp rosewater. Stir to blend.

Step 3

Add the mint: bruise the 10g fresh mint leaves lightly between your fingers to release aroma and stir into the juice mixture. Chill briefly if time allows, about 5 minutes, or use immediately.

Step 4

To serve, divide pomegranate seeds between 4 tall glasses. Add ice if using.

Step 5

Pour 100ml of the pomegranate mixture into each glass, then top with about 125ml chilled sparkling water. Stir gently once to combine.

Step 6

Garnish each glass with a sprig of mint and a thin lemon wheel. Taste and adjust: add a little more rosewater only if desired, or a splash more sparkling water for a lighter drink.

Recipe Notes
