Ingredients
240 ml Fresh orange juice (or about 2 large oranges squeezed)
40 ml Fresh lemon juice (or 1 lemon squeezed)
60 ml Unsweetened cranberry juice (for a touch of berry tartness)
50 g Caster sugar (for quick thyme syrup)
50 ml Water (for syrup)
6 sprigs Fresh thyme (4 sprigs for syrup, 2 for garnish)
600 ml Chilled sparkling water (to top up and add fizz)
as needed Ice cubes
Orange slices (for garnish)
Method
Step 1
Make the thyme syrup: put the caster sugar, 50 ml water and 4 thyme sprigs in a small saucepan. Warm gently over a low heat, stirring until the sugar dissolves, then simmer very gently for 2 minutes to infuse. Remove from the heat and leave to cool for 5 minutes, then remove and discard the thyme.
Step 2
Juice the oranges and lemon into a measuring jug, strain if you prefer a smoother drink (or use carton juice). Add the unsweetened cranberry juice and the cooled thyme syrup, stir to combine.
Step 3
Fill four glasses with ice if using. Divide the juice mixture between the glasses.
Step 4
Top each glass with chilled sparkling water (about 150 ml per glass) and stir gently to combine so you keep the sparkle.
Step 5
Garnish each glass with an orange slice and a small sprig of thyme. Serve immediately.
