Greek Lemon & Mint Spritz

An uplifting alcohol-free spritz inspired by Greek sunshine. Quick to make with lemons, fresh mint, cucumber and sparkling water for a bright, refreshing drink.

Ingredients

100g Caster sugar (for simple syrup)

100ml Water (for syrup)

2 Lemons, juiced (reserve a few thin slices for garnish)

150g Cucumber, thinly sliced

15g Fresh mint, roughly torn (plus extra sprigs for garnish)

750ml Soda water, chilled

Ice cubes

Method

Step 1

Make the simple syrup: place the caster sugar and 100ml water in a small saucepan and warm gently over a low heat, stirring until the sugar dissolves. Bring to a very gentle simmer for 1 minute, then remove from the heat and leave to cool.

Step 2

Meanwhile juice the lemons and thinly slice the cucumber. Wake and tear the mint leaves to release their aroma.

Step 3

In a large jug combine the cooled syrup and lemon juice. Add the sliced cucumber and torn mint, stir, and leave to infuse in the fridge for at least 10 minutes if time allows.

Step 4

To serve, fill tall glasses with ice. Add about 150ml of the lemon-mint base to each glass, then top with chilled sparkling water. Stir gently to combine.

Step 5

Garnish with cucumber ribbons and a sprig of mint and a lemon slice on the rim. Serve immediately.

Recipe Notes
