6 limes (about 180ml juice) Limes, juiced (reserve 4 thin slices for garnish)
100g Caster sugar (or golden caster sugar)
100ml Water (for syrup)
600ml Sparkling water, chilled
400g Ice, crushed
10g Fresh mint, lightly bruised (for garnish)
Method
Step 1
Make a simple syrup: combine the caster sugar and 100ml water in a small saucepan. Warm gently over a low heat, stirring until the sugar dissolves. Remove from the heat and leave to cool to room temperature.
Step 2
Juice the limes into a measuring jug, removing any seeds. If you prefer a smoother drink, strain the juice through a fine sieve to remove pulp.
Step 3
In a large pitcher, mix the cooled simple syrup with the lime juice. Taste and adjust: add a little extra syrup if you prefer sweeter, or a splash more lime juice for extra tartness.
Step 4
Fill four glasses with crushed ice. Add a few bruised mint leaves to each glass if using.
Step 5
Divide the lime and syrup mixture between the glasses (about 120ml per glass). Top each glass with 150ml sparkling water, stir gently to combine, and garnish with a lime slice and a sprig of mint.
Step 6
Serve immediately while fizzy and cold.
