Tamago Toast: Japanese-Style Brunch with Sesame-Soy Drizzle

Ingredients
4 slices Thick-cut bread (use white or wholemeal)
4 Large eggs, beaten (room temperature if possible)
30 ml Whole milk
1/2 tsp Light soy sauce (for eggs)
1 tbsp Light soy sauce (for drizzle)
1 tsp Toasted sesame oil (for eggs)
1 tsp Toasted sesame oil (for drizzle)
10 g Unsalted butter (for frying; use neutral oil if preferred)
1 tbsp Toasted sesame seeds (reserve half for garnish)
1 tsp Honey (or 1 tsp caster sugar)
1 tsp Rice vinegar
2 Spring onions, thinly sliced
A pinch of Salt
A pinch of Black pepper
Method
Step 1
Toast the bread in a toaster or under a hot grill until golden and crisp. Keep warm.
Step 2
Thinly slice the spring onions, keeping the white and green parts separate. Toast the sesame seeds in a dry pan for 30–60 seconds until fragrant if not using pre-toasted.
Step 3
In a bowl whisk the eggs with the milk, 1/2 tsp soy sauce, 1 tsp toasted sesame oil and a pinch of salt and pepper until frothy.
Step 4
Mix the drizzle: in a small bowl combine 1 tbsp soy sauce, 1 tsp toasted sesame oil, 1 tsp rice vinegar, 1 tsp honey and 1 tbsp water. Stir in half the sesame seeds and set aside.
Step 5
Heat a non-stick frying pan over medium-low. Add the butter and when foaming pour in the egg mixture. Cook gently, using a spatula to lift and fold the set edges towards the centre, creating layers or a soft folded omelette. Cook 2–4 minutes until set but still soft.
Step 6
Divide the omelette between the four toast slices, folding or placing it neatly on top.
Step 7
Drizzle each slice with the sesame-soy dressing, scatter the remaining sesame seeds and the sliced spring onion greens, and season to taste with a little extra black pepper.
Step 8
Serve immediately while the toast is crisp and the eggs are warm.
